Ingredients

  • 2 cups chopped raw cashews
  • 10 pieces Medjool dates, pitted
  • 1 tablespoon lemon zest
  • ½ tablespoon lemon juice
  • ½ cup shredded unsweetened coconut
  • 1 tablespoon chia seeds
  • a pinch salt

Instructions

  1. Blend the cashews in a food processor until they turn into a meal.
  2. Add the remaining ingredients (except chia seeds) and blend until a sticky dough forms.
  3. Incorporate the chia seeds and pulse to combine.
  4. Use a tablespoon to scoop and form the mixture into balls.
  5. If the dough is not sticky enough, add more lemon juice as needed.
  6. Place the formed balls on a baking sheet and freeze for at least 30 minutes.
  7. Transfer the frozen balls to a plastic bag for storage in the freezer.
