Instructions
- Blend the cashews in a food processor until they turn into a meal.
- Add the remaining ingredients (except chia seeds) and blend until a sticky dough forms.
- Incorporate the chia seeds and pulse to combine.
- Use a tablespoon to scoop and form the mixture into balls.
- If the dough is not sticky enough, add more lemon juice as needed.
- Place the formed balls on a baking sheet and freeze for at least 30 minutes.
- Transfer the frozen balls to a plastic bag for storage in the freezer.
