Ingredients

The mixture

  • cups raw walnut halves
  • 1 cup Medjool dates (soft & squishy; pits removed)
  • ¼ cup cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt

Optional coating

  • to taste additional cocoa powder

Instructions

  1. Grind the walnuts in a food processor until finely ground.
  2. Add the dates, cocoa powder, vanilla extract, and salt to the ground walnuts.
  3. Process the mixture until it forms a sticky, uniform dough.
  4. Scoop the mixture using a tablespoon and roll into balls.
  5. Optionally, roll the balls in cocoa powder for coating.
  6. Store the energy balls in an airtight container in the fridge or freezer.
