Instructions
- Check the dates for softness; soak in hot water if they are hard.
- In a food processor, combine the oat flour, walnuts, almond butter, dates, vanilla, water, and salt. Pulse until the mixture sticks together.
- If the mixture is too crumbly, add more water gradually until it becomes cohesive.
- Transfer the mixture to a bowl and fold in the chocolate chips.
- Use a 2-tablespoon cookie scoop to portion and roll the mixture into balls.
- Store in the fridge for up to a week or freeze for up to 3 months.
