Ingredients

The base

  • cups oat flour
  • 1 cup walnuts
  • cup creamy natural almond butter
  • 10 pieces soft Medjool dates
  • 1 teaspoon vanilla extract
  • 2 tablespoons water
  • ½ teaspoon sea salt

The mix-ins

  • ½ cup mini chocolate chips

Instructions

  1. Check the dates for softness; soak in hot water if they are hard.
  2. In a food processor, combine the oat flour, walnuts, almond butter, dates, vanilla, water, and salt. Pulse until the mixture sticks together.
  3. If the mixture is too crumbly, add more water gradually until it becomes cohesive.
  4. Transfer the mixture to a bowl and fold in the chocolate chips.
  5. Use a 2-tablespoon cookie scoop to portion and roll the mixture into balls.
  6. Store in the fridge for up to a week or freeze for up to 3 months.
