Ingredients

The doughnuts

  • 2 tablespoon active dry yeast
  • 1 cup warm milk
  • cups bread flour
  • 1 teaspoon pure vanilla extract
  • 3 large egg yolks
  • 2 tablespoons granulated sugar
  • ½ teaspoon kosher salt
  • 4 tablespoons unsalted butter
  • as needed cup canola oil for frying
  • 1 cup creamy peanut butter

Strawberry Rhubarb Chia Jelly

  • 1 vanilla bean cut lengthwise, seeds reserved
  • 1 cup diced rhubarb
  • 1 cup strawberries
  • 4 tablespoons honey
  • 1 lemon juiced
  • 2 tablespoons chia seeds

Glaze

  • cups powdered sugar
  • 3-4 tablespoons milk
  • 2 teaspoons vanilla extract

Instructions

  1. Combine yeast with warm milk and a portion of flour to create a paste, then let it rest.
  2. Mix the rest of the yeast, milk, flour, vanilla, and egg yolks in a stand mixer until smooth.
  3. Add sugar, salt, and butter, then gradually add remaining flour and knead until smooth.
  4. Cover the dough and let it rise in a warm place for 1 hour.
  5. Roll out the dough and cut into doughnut shapes, then let them proof until doubled in size.
  6. Heat oil in a pot and fry the doughnuts until golden brown, then cool on a wire rack.
  7. For the jelly, cook rhubarb, lemon juice, honey, and vanilla seeds until soft, then add strawberries and chia seeds.
  8. Prepare the glaze by mixing powdered sugar, milk, and vanilla until smooth.
  9. Fill the doughnuts with jelly and peanut butter, then dip in the glaze.
