Ingredients

Doughnut Batter

  • ¼ cup peanut butter
  • ¼ cup sugar
  • cup skim milk
  • 1 tablespoon fat free Greek yogurt
  • ½ teaspoon vanilla extract
  • 1 large egg
  • 1 cup white whole wheat flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

Filling

  • 2 tablespoons sugar free preserves

Instructions

  1. Preheat the oven to 325°F and lightly spray a doughnut pan with cooking spray.
  2. In a large bowl, combine peanut butter and sugar, mixing until combined.
  3. Add skim milk, Greek yogurt, vanilla extract, and egg to the mixture and blend again.
  4. Incorporate white whole wheat flour, baking powder, and salt, mixing until just combined.
  5. Distribute the batter evenly into the doughnut pan.
  6. Microwave the sugar free preserves for 10-15 seconds and drizzle a teaspoon over each doughnut batter space.
  7. Bake for about 10 minutes or until golden brown and a toothpick comes out clean.
  8. Allow the doughnuts to cool before serving.
