Ingredients

  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1 tablespoon poppy seeds
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • cup 1% low fat buttermilk
  • cup fat free plain Greek yogurt
  • 1 tablespoon canola oil
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon vanilla extract
  • 2 teaspoons powdered sugar

Instructions

  1. Preheat the oven to 400°F and lightly coat a doughnut pan with cooking spray.
  2. In a medium bowl, combine the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the egg, buttermilk, yogurt, oil, lemon juice, lemon zest, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir to combine.
  5. Dust the doughnut pan with 1 teaspoon of powdered sugar and fill each space ⅔ full with batter.
  6. Bake for 10-12 minutes, then cool for five minutes before removing from the pan.
  7. Dust with the remaining powdered sugar before serving.
