The glaze

Instructions
- Preheat the oven to 375°F and prepare the doughnut tins with butter and flour.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds.
- In a separate bowl, blend the melted butter, canola oil, sugar, and lemon zest using an electric mixer.
- Add the eggs one at a time to the mixture.
- In a measuring cup, whisk the lemon juice with the buttermilk.
- Gradually add the flour mixture and buttermilk mixture to the wet ingredients in three batches, mixing until just combined.
- Fill the doughnut wells with the batter, about ⅓-inch from the top.
- Bake for 7-8 minutes until a toothpick comes out clean, then cool slightly before transferring to a wire rack.
- For the glaze, whisk together powdered sugar and lemon juice, then dip the tops of the doughnuts in the glaze.
- Sprinkle with poppy seeds and allow the glaze to set before serving.
