Ingredients

Frosting

  • ¼ cup coconut milk
  • ¼ cup honey
  • 2 tbsp coconut flour
  • 5 drops vanilla liquid stevia

Donuts

  • ¼ cup lemon juice
  • ¼ cup honey
  • ¼ tsp vanilla liquid stevia
  • 2 room temperature eggs
  • 1 tbsp coconut oil, liquified
  • 2 tbsp brown rice flour
  • 2 tbsp tapioca flour (or arrowroot)
  • ¼ cup coconut flour, sifted
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp poppy seeds

Instructions

  1. 1. Mix the donut ingredients using an electric mixer.
  2. 2. Grease and flour the donut pan, then scoop 2 tbsp of batter into each mold for a total of 6 donuts.
  3. 3. Bake the donuts at 325°F for about 10 minutes.
  4. 4. For the frosting, whisk together the coconut milk and honey, then add the coconut flour and stevia, whisking until combined.
  5. 5. After the donuts have cooled, remove them from the pan and top with the frosting.
