Ingredients

The donuts

  • 1 cup gluten free flour
  • ½ cup coconut sugar
  • ½ cup apple sauce
  • ¼ cup olive oil
  • 1 each lemon (juice)
  • 1 tsp baking powder
  • cup non-dairy milk
  • cup bone broth (optional)
  • 1 tbsp lemon zest
  • ½ cup shredded coconut
  • pinch sea salt

The lemon glaze

  • 1 ½ cups powdered sugar
  • 2-3 tbsp lemon juice
  • ½ cup chopped pistachios
  • to taste shredded sweetened coconut

Instructions

  1. Preheat the oven to 350°F and lightly spray a donut pan.
  2. In a medium bowl, mix the gluten free flour, shredded coconut, baking powder, and sea salt.
  3. In another bowl, whisk together the coconut sugar, apple sauce, bone broth, olive oil, lemon juice, lemon zest, and non-dairy milk.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Fill the donut cavities with the batter using a piping bag or spoon.
  6. Bake for 12-13 minutes.
  7. Let the donuts cool for about 10 minutes before transferring them to a cooling rack.
  8. Prepare the lemon glaze by mixing powdered sugar with lemon juice until thick.
  9. Dip the top half of each donut in the glaze and sprinkle with crushed pistachios and shredded coconut.
