Green Eggs and Ham Mini Quiche

Instructions
- Chill the cubed butter in the freezer before starting.
- Sift together flour, sugar, and salt, then pulse with butter in a food processor until crumbly.
- Slowly add buttermilk while pulsing until the dough holds together.
- Form the dough into two disks, wrap in plastic, and refrigerate for at least an hour.
- Preheat the oven to 400°F and prepare a mini muffin tin with cooking spray.
- Roll out the dough and cut into rounds to fit the muffin tin, then pre-bake for 10 minutes.
- Lower the oven temperature to 375°F.
- Whisk together eggs, milk, and food coloring.
- Add diced ham to each crust, pour the egg mixture on top, and season with salt and pepper.
- Top with shredded cheese and bake for 11-14 minutes until set and golden.
