Ingredients

Buttermilk Crust

  • 1 cup cold unsalted butter, cut into 1-inch chunks
  • 2 ½ cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • cup buttermilk

Filling

  • ½ cup cooked ham, diced very small
  • 2 large eggs
  • ¼ cup milk
  • 3-4 drops green food coloring
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Chill the cubed butter in the freezer before starting.
  2. Sift together flour, sugar, and salt, then pulse with butter in a food processor until crumbly.
  3. Slowly add buttermilk while pulsing until the dough holds together.
  4. Form the dough into two disks, wrap in plastic, and refrigerate for at least an hour.
  5. Preheat the oven to 400°F and prepare a mini muffin tin with cooking spray.
  6. Roll out the dough and cut into rounds to fit the muffin tin, then pre-bake for 10 minutes.
  7. Lower the oven temperature to 375°F.
  8. Whisk together eggs, milk, and food coloring.
  9. Add diced ham to each crust, pour the egg mixture on top, and season with salt and pepper.
  10. Top with shredded cheese and bake for 11-14 minutes until set and golden.
