Mini Quiche

Ingredients

The filling

  • 2-3 slices deli ham, diced
  • 3 scallions chopped (save 1 teaspoon for garnish)
  • 5 pieces cherry tomatoes, diced
  • 1 extra large egg or 2 regular-sized eggs
  • 3/8 cup milk
  • 1/3 cup grated cheese, cheddar/mozzarella

The pastry

  • 11-12 oz ready rolled short Pie Pastry, thawed
  • to taste vegetable oil, for greasing
  • to taste all-purpose flour, for dusting

Instructions

  1. Mix together the diced ham, chopped scallions, and diced cherry tomatoes in a bowl.
  2. In another bowl, beat the egg and milk with a fork and chill while preparing the pastry.
  3. Preheat the oven to 425°F (210°C) and grease a 12-tin mini muffin pan.
  4. Roll out the pastry on a floured surface and cut out 12 circles using a 3-inch cutter.
  5. Place each circle in a cup of the muffin pan and press down to form a shallow cup.
  6. Divide the ham, scallions, and tomatoes equally among the cups.
  7. Fill each cup with the egg and milk mixture until it is 80-90% full and sprinkle cheese on top.
  8. Bake for 18-20 minutes until the mini quiches are set and golden.
  9. Garnish with chopped scallions and serve warm.
