ready rolled short Pie Pastry, thawed

all-purpose flour, for dusting
Instructions
- Mix together the diced ham, chopped scallions, and diced cherry tomatoes in a bowl.
- In another bowl, beat the egg and milk with a fork and chill while preparing the pastry.
- Preheat the oven to 425°F (210°C) and grease a 12-tin mini muffin pan.
- Roll out the pastry on a floured surface and cut out 12 circles using a 3-inch cutter.
- Place each circle in a cup of the muffin pan and press down to form a shallow cup.
- Divide the ham, scallions, and tomatoes equally among the cups.
- Fill each cup with the egg and milk mixture until it is 80-90% full and sprinkle cheese on top.
- Bake for 18-20 minutes until the mini quiches are set and golden.
- Garnish with chopped scallions and serve warm.
