Ingredients

The dough

  • ½ batch Master Bread Dough
  • for pan Extra-virgin olive oil
  • for surface Bread flour

The toppings

  • 8 oz low-moisture mozzarella or brick cheese
  • ¾ cup store-bought marinara sauce
  • 4 oz pepperoni, sliced
  • ½ tsp dried oregano
  • ½ cup basil leaves

Instructions

  1. Prepare a half-batch of the Master Bread Dough.
  2. Brush the pizza pan with olive oil and flour the work surface.
  3. Turn the dough out onto the floured surface and shape it into a round.
  4. Transfer the dough to the prepared pan, rub with oil, and let it rise for about 1 hour.
  5. Cut the cheese into small cubes.
  6. Preheat the oven to 450°F and dimple the dough, pushing it out to the edges.
  7. Scatter the cheese over the dough, then spoon the marinara sauce in three rows.
  8. Distribute the pepperoni over the sauce and sprinkle with oregano.
  9. Bake for 35-40 minutes until the crust is golden brown.
  10. Top with basil leaves, let cool for 5 minutes, then slice.
