Instructions
- Prepare the dough by mixing flour, salt, and yeast, then adding cold water and mixing until a sticky dough forms.
- Cover the dough and let it rise overnight or for 10 to 12 hours.
- Deflate the dough and optionally refrigerate it for up to a week.
- Grease a 10x14-inch pan with butter and oil, then place the dough in the pan and let it rise for 3 to 4 hours.
- Dimple the dough and let it rise for another hour before parbaking it at 500°F for 8 minutes.
- Let the parbaked crust cool upside down on a rack for 20 minutes.
- Return the crust to the pan and add the cheese around the edges and hand-grated mozzarella in the center.
- Spread the tomato sauce over the cheese and add pepperoni and jalapeños.
- Bake at 475°F for 10 minutes, then let it cool for 5 minutes before serving.
