Ingredients

Dough

  • 288 grams bread flour
  • 6 grams kosher salt
  • 2 grams instant yeast
  • 240 grams cold water

Toppings

  • 14 grams softened butter
  • 5 grams olive oil
  • 170 grams pre-shredded Cheddar cheese
  • 113 grams pre-shredded low-moisture, whole-milk mozzarella cheese
  • 170 grams hand-grated low-moisture, whole-milk mozzarella cheese
  • 85 grams pepperoni
  • 60 grams pickled jalapeños (optional)
  • 120 grams tomato sauce
  • to taste honey (optional)

Instructions

  1. Prepare the dough by mixing flour, salt, and yeast, then adding cold water and mixing until a sticky dough forms.
  2. Cover the dough and let it rise overnight or for 10 to 12 hours.
  3. Deflate the dough and optionally refrigerate it for up to a week.
  4. Grease a 10x14-inch pan with butter and oil, then place the dough in the pan and let it rise for 3 to 4 hours.
  5. Dimple the dough and let it rise for another hour before parbaking it at 500°F for 8 minutes.
  6. Let the parbaked crust cool upside down on a rack for 20 minutes.
  7. Return the crust to the pan and add the cheese around the edges and hand-grated mozzarella in the center.
  8. Spread the tomato sauce over the cheese and add pepperoni and jalapeños.
  9. Bake at 475°F for 10 minutes, then let it cool for 5 minutes before serving.
