Ingredients

The cookie mixture

  • 1 medium ripe banana, mashed
  • ½ cup creamy almond butter
  • 2 tbsp chia seeds
  • 2 tbsp cacao powder
  • ¼ cup coconut sugar
  • ½ tsp vanilla extract
  • ¼ tsp baking soda
  • tsp salt

Add-ins

  • ¼ cup chopped cranberries
  • ¼ cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. In a medium bowl, mash the banana and mix in almond butter, chia seeds, cacao powder, coconut sugar, vanilla, baking soda, and salt until well combined.
  3. Fold in the chopped cranberries and optional chocolate chips.
  4. With wet hands, form the dough into about 10 balls and flatten them slightly.
  5. Bake for approximately 10 minutes until set and then let cool.
  6. Store the cookies in an airtight container in the refrigerator.
