Healthy Blender Spinach Muffins

Ingredients

  • 3 medium over-ripe bananas
  • 2 cups spinach
  • ¼ cup milk of choice
  • ¼ cup avocado oil or melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups old fashioned oats
  • ¼ cup coconut sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp fine sea salt
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin.
  2. Blend bananas, spinach, milk, oil, eggs, and vanilla until smooth.
  3. Add oats, coconut sugar, baking soda, baking powder, cinnamon, and salt, and blend again until smooth.
  4. If using, fold in chocolate chips.
  5. Pour the batter into the muffin tin and bake for 23 minutes.
  6. Allow to cool on a wire rack for at least 10 minutes before enjoying.
