Ingredients

Wet Ingredients

  • 1 large banana, mashed
  • 1 large egg
  • 2 large egg whites
  • ½ cup plain, 2% Greek yogurt
  • 1 teaspoon vanilla
  • 2 tablespoons coconut oil, melted

Dry Ingredients

  • 1 cup ground oat flour
  • 1 teaspoon baking powder
  • ¼ cup coconut sugar
  • ¼ cup cocoa powder
  • 1 tablespoon cocoa powder (optional for extra chocolatey)
  • cup chocolate chips
  • 2 cups packed spinach

Instructions

  1. Preheat the oven to 350ºF and line a muffin pan with muffin liners.
  2. Blend the banana and Greek yogurt until smooth, then add the spinach and blend again.
  3. Add the remaining ingredients to the blender and pulse until combined.
  4. Scoop the batter into the muffin tins, filling them about ¾ full.
  5. Bake for about 20 minutes or until the center is fully cooked.
