Ingredients

The cookie dough

  • cups blanched almond flour
  • ¼ cup cacao powder
  • 2 tablespoons organic decaf coffee beans, espresso grind
  • ½ teaspoon baking soda
  • ½ teaspoon celtic sea salt

The wet ingredients

  • ½ cup grapeseed oil or palm shortening
  • ½ cup agave nectar or honey
  • 1 tablespoon vanilla extract
  • ¾ cup chocolate chips

Instructions

  1. Combine the dry ingredients in a large bowl.
  2. In a small bowl, mix together the wet ingredients.
  3. Combine the wet and dry mixtures, then fold in the chocolate chips.
  4. Drop tablespoonfuls of dough onto a lined baking sheet.
  5. Bake at 350°F for 7-8 minutes.
  6. Cool the cookies before serving.
