Ingredients

The cookie base

  • cups blanched almond flour
  • ¼ cup unsweetened cacao powder
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup palm shortening
  • ¼ cup honey

The chocolate chips

  • ½ cup chocolate chips
  • ½ cup milk chocolate chips
  • ½ cup white chocolate chips

Instructions

  1. Combine almond flour and cacao powder in a large bowl.
  2. Stir in salt and baking soda.
  3. In a medium bowl, cream together the shortening and honey.
  4. Mix the wet ingredients into the dry ingredients.
  5. Fold in all chocolate chips.
  6. Scoop dough onto parchment-lined baking sheets, about 1 tablespoon each.
  7. Flatten the dough with your hand.
  8. Bake at 350°F for 7-10 minutes.
  9. Cool and serve.
