Ingredients

The dough

  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 1 cup unsalted butter
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup toffee bits

The chocolate coating

  • 2 cups milk chocolate chips

Instructions

  1. Whisk together the flour and salt in a small bowl and set aside.
  2. In a stand mixer, beat the butter and powdered sugar until smooth and creamy.
  3. Add the vanilla extract and mix well.
  4. Gradually add the flour mixture and mix until just combined.
  5. Stir in ½ cup of toffee bits.
  6. Shape the dough into a disk, wrap in plastic wrap, and chill for at least 1 hour.
  7. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  8. Roll out the chilled dough to ¼ inch thick and cut into desired shapes.
  9. Place the cookies on the baking sheet and bake for 15-18 minutes until lightly browned.
  10. Cool the cookies on a wire rack.
  11. Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  12. Dip the cooled cookies in the melted chocolate and sprinkle with remaining toffee bits.
  13. Place the dipped cookies on parchment paper to set.
