Chocolate Dipped Toffee Shortbread

The chocolate coating

Instructions
- Whisk together the flour and salt in a small bowl and set aside.
- In a stand mixer, beat the butter and powdered sugar until smooth and creamy.
- Add the vanilla extract and mix well.
- Gradually add the flour mixture and mix until just combined.
- Stir in ½ cup of toffee bits.
- Shape the dough into a disk, wrap in plastic wrap, and chill for at least 1 hour.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Roll out the chilled dough to ¼ inch thick and cut into desired shapes.
- Place the cookies on the baking sheet and bake for 15-18 minutes until lightly browned.
- Cool the cookies on a wire rack.
- Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Dip the cooled cookies in the melted chocolate and sprinkle with remaining toffee bits.
- Place the dipped cookies on parchment paper to set.
