Paleo Tomato Basil Soup With Sausage

Instructions
- Chop the onion, garlic, basil, and sausage.
- In a stockpot or Dutch oven, heat the avocado oil over medium heat.
- Add the onion and sauté until softened, about 5-6 minutes.
- Add the garlic and sauté for another 1-2 minutes.
- Stir in the tomato paste, diced tomatoes, hot sauce, chicken broth, coconut milk, and half of the chopped basil. Season with salt and pepper.
- Cook until warmed through, about 6-7 minutes, stirring occasionally.
- Use an immersion blender to puree the soup until smooth.
- Add the sausage slices and cook until warmed through, about 5-6 minutes.
- Taste and adjust seasoning if necessary, then serve garnished with the remaining basil.
