Paleo Tomato Basil Soup With Sausage

Ingredients

  • 2 tbsp avocado oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • ½ cup fresh basil leaves, chopped
  • 1 lb pre-cooked Italian sausage, sliced
  • 2 tbsp tomato paste
  • 2 cans diced tomatoes (28 oz cans)
  • 1 tsp hot sauce
  • 3 cups chicken broth
  • ½ cup coconut milk
  • to taste salt and pepper

Instructions

  1. Chop the onion, garlic, basil, and sausage.
  2. In a stockpot or Dutch oven, heat the avocado oil over medium heat.
  3. Add the onion and sauté until softened, about 5-6 minutes.
  4. Add the garlic and sauté for another 1-2 minutes.
  5. Stir in the tomato paste, diced tomatoes, hot sauce, chicken broth, coconut milk, and half of the chopped basil. Season with salt and pepper.
  6. Cook until warmed through, about 6-7 minutes, stirring occasionally.
  7. Use an immersion blender to puree the soup until smooth.
  8. Add the sausage slices and cook until warmed through, about 5-6 minutes.
  9. Taste and adjust seasoning if necessary, then serve garnished with the remaining basil.
