Spicy Peanut Tempeh

Ingredients

  • 1 block tempeh
  • 3 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tsp fresh ginger
  • 1 tbsp sesame oil
  • 2 tbsp lime juice
  • 2 tbsp peanut butter
  • 1 tbsp sriracha

Instructions

  1. Chop the tempeh into triangles or slices.
  2. In a large bowl, whisk together all marinade ingredients except the tempeh.
  3. Add the tempeh to the marinade and toss to ensure it is evenly coated.
  4. Refrigerate the marinated tempeh for at least 2 hours, up to 12 hours.
  5. After marinating, place the tempeh on a parchment-lined baking sheet and pour any remaining marinade on top.
  6. Bake the tempeh in a preheated oven at 375°F for 20 minutes.
  7. Serve immediately, enjoying it on salads, in bowls, with veggies, or with rice noodles.
