Instructions
- Wash the Brussel sprouts, trim the ends, and slice them thinly or use a food processor to shave them.
- In a large salad bowl, combine the shaved Brussel sprouts, cilantro, green onions, coconut, and papaya.
- In a small bowl, mix together the peanut oil, lemon juice, peanut butter, ginger, and agave nectar until smooth to make the vinaigrette.
- Toss the vinaigrette into the salad and mix well. Adjust seasonings with a pinch of sea salt if desired.
