Instructions
- Whisk together flour, baking powder, and salt in a mixing bowl and set aside.
- In a stand mixer, blend butter and sugar until just combined, then scrape down the bowl.
- Mix in egg, vanilla extract, and almond extract, then scrape down the bowl again.
- Add the flour mixture and mix until combined, then scoop the dough and divide it into two balls.
- Dust and roll each dough ball to ¼-inch thick between sheets of parchment paper.
- Transfer the dough on parchment to a baking sheet and freeze for 15 minutes.
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Cut the chilled dough into desired shapes using cookie cutters and transfer to the baking sheets.
- Bake for 9 to 12 minutes until nearly set, then cool on the baking sheet for at least 15 minutes before transferring to a wire rack.
- Repeat with remaining dough, re-rolling scraps as necessary, and let cookies cool completely before icing.
