Healthy Cauliflower Fried Rice and Kalua Pork Bowls

Ingredients

The fried rice

  • teaspoons olive oil
  • cup diced onion
  • ½ red bell pepper diced
  • 2 teaspoons minced fresh ginger
  • 2-3 cloves garlic
  • 4 cups crumbled cauliflower
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 cups bagged coleslaw cabbage mix
  • 3-4 tablespoons chopped green onion
  • 3-4 tablespoons chopped cilantro

Optional toppings

  • Shredded Kalua Pork

Instructions

  1. Heat a large sauté pan over medium heat and add 1½ teaspoons of olive oil.
  2. Sauté the diced onion and red bell pepper for 4-5 minutes until tender.
  3. Add the minced ginger and garlic, cooking for about 1 minute until fragrant.
  4. Drizzle in the remaining olive oil and add the crumbled cauliflower, increasing the heat slightly.
  5. Cook the cauliflower for 3-4 minutes until tender, pushing the mixture to one side of the pan.
  6. Add the coleslaw mix to the other side of the pan and cook for about 2 minutes until slightly brown.
  7. Turn off the heat and mix everything together, then stir in the green onion and cilantro.
  8. Taste and adjust seasoning with additional salt and pepper if needed.
  9. Divide into servings and top with shredded Kalua Pork if desired.
