Healthy Cauliflower Fried Rice and Kalua Pork Bowls

Instructions
- Heat a large sauté pan over medium heat and add 1½ teaspoons of olive oil.
- Sauté the diced onion and red bell pepper for 4-5 minutes until tender.
- Add the minced ginger and garlic, cooking for about 1 minute until fragrant.
- Drizzle in the remaining olive oil and add the crumbled cauliflower, increasing the heat slightly.
- Cook the cauliflower for 3-4 minutes until tender, pushing the mixture to one side of the pan.
- Add the coleslaw mix to the other side of the pan and cook for about 2 minutes until slightly brown.
- Turn off the heat and mix everything together, then stir in the green onion and cilantro.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Divide into servings and top with shredded Kalua Pork if desired.
