Spicy Pineapple Cauliflower Pork Fried Rice

Ingredients

The main ingredients

  • 1 small head cauliflower, riced
  • 1 lb ground pork
  • 2 cups fresh pineapple, cut into small cubes
  • 2 eggs eggs
  • ½ tsp cayenne pepper

The sauces and seasonings

  • 2 tbsp coconut aminos
  • 2 tsp fish sauce
  • to taste salt and pepper

The garnish

  • ½ bunch green onions, diced

Instructions

  1. Prepare the green onions and pineapple by cutting them into small pieces.
  2. Rice the cauliflower using a food processor or a hand grater.
  3. In a large pan over medium-high heat, brown the ground pork, seasoning with salt and pepper.
  4. Add the riced cauliflower to the pan along with the pineapple, green onions, coconut aminos, fish sauce, cayenne, and additional salt and pepper.
  5. Cook the mixture for 3-4 minutes, stirring occasionally until the cauliflower begins to soften.
  6. Crack the eggs into the pan and scramble them until fully cooked, about 2-3 minutes.
  7. Remove from heat and serve immediately.
