Spicy Pineapple Cauliflower Pork Fried Rice

Instructions
- Prepare the green onions and pineapple by cutting them into small pieces.
- Rice the cauliflower using a food processor or a hand grater.
- In a large pan over medium-high heat, brown the ground pork, seasoning with salt and pepper.
- Add the riced cauliflower to the pan along with the pineapple, green onions, coconut aminos, fish sauce, cayenne, and additional salt and pepper.
- Cook the mixture for 3-4 minutes, stirring occasionally until the cauliflower begins to soften.
- Crack the eggs into the pan and scramble them until fully cooked, about 2-3 minutes.
- Remove from heat and serve immediately.
