Ingredients

The main ingredients

  • 6 cups cauliflower, riced
  • 1 lb ground pork
  • 2 eggs eggs
  • 1 cup fresh peas

The flavorings

  • 2 tbsp sesame oil
  • 2 tsp fish sauce
  • 1 tsp fresh ginger, grated
  • ¼ tsp cayenne pepper
  • ½ tsp sea salt
  • ½ tsp ground pepper

The garnish

  • 2 pieces green onions, diced

Instructions

  1. Prepare the green onions and grate the ginger.
  2. Rice the cauliflower using a food processor or hand grater.
  3. Heat sesame oil in a large pan over medium-high heat.
  4. Add ground pork to the pan, breaking it into small bits and seasoning with salt and pepper. Cook until browned, about 8 minutes.
  5. Stir in green onions, ginger, fish sauce, and cayenne pepper.
  6. Add cauliflower rice and peas, mixing well and cooking for 2-3 minutes until softened.
  7. Clear a space in the pan and crack the eggs, scrambling them until fully cooked.
  8. Mix the scrambled eggs with the rice and cook for an additional 1-2 minutes to finish.
