Spicy Pork Bowls

Ingredients

The Bowl

  • 2 lbs ground pork
  • 6 cups greens (mixed greens, spinach, or kale)
  • 6 ribs celery, sliced
  • 2 pcs carrots, sliced
  • 1 pc bell pepper, thinly sliced
  • 4 cups cauliflower rice

The Sauce

  • ¼ cup coconut aminos
  • ¼ cup water
  • 1 tbsp fish sauce
  • ¼ cup mayo
  • 1 tbsp hot sauce

Seasonings

  • 1 tbsp toasted sesame oil
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • 2 tsp crushed red pepper flakes
  • 1 tbsp fresh ginger, grated

Instructions

  1. Prep the ginger, greens, celery, carrots, and bell pepper, and set aside.
  2. Heat sesame oil in a large skillet over medium-high heat and add ground pork, breaking it up into small bits.
  3. Add ginger, crushed red pepper, garlic powder, and salt to the pork, cooking until browned and crispy, about 8 minutes.
  4. If making the optional sauce, mix mayo and hot sauce in a bowl and refrigerate until serving.
  5. Add coconut aminos, water, and fish sauce to the pork, cooking for another 3-4 minutes. Taste and adjust seasoning if needed.
  6. Remove the pork from the pan and set aside.
  7. Add more oil if needed, then sauté celery, carrots, and bell pepper until softened, about 3-4 minutes.
  8. In another skillet, cook the cauliflower rice over medium heat, seasoning with salt and pepper until softened, about 5 minutes.
  9. To serve, start with a bed of greens, then layer with cauliflower rice, sautéed veggies, and pork. Top with optional sauce if desired.
