Ingredients

Spicy Peanut Sauce

  • ¼ cup natural-style peanut butter
  • 1 Tbsp sriracha
  • 1 tsp soy sauce
  • 1 tsp grated fresh ginger
  • 1 tsp brown sugar
  • 3 Tbsp hot water

Pork and Vegetable Mixture

  • ½ Tbsp neutral cooking oil
  • 2 cloves garlic
  • 1 tsp grated fresh ginger
  • ½ lb. ground pork, chicken or turkey
  • 8 oz. button mushrooms
  • 1 large carrot
  • 1 red bell pepper
  • cup hoisin sauce
  • 1 Tbsp soy sauce
  • 1 tsp toasted sesame oil

Bowl Ingredients

  • 4 cups cooked rice
  • ¼ cup peanuts, chopped
  • 3 green onions, sliced

Instructions

  1. Prepare the spicy peanut sauce by mixing peanut butter, sriracha, soy sauce, brown sugar, and grated ginger in a bowl, then thin it with hot water and set aside.
  2. Mince garlic and grate ginger, then heat cooking oil in a skillet over medium heat.
  3. Sauté garlic and ginger until softened, then add ground meat and cook until browned.
  4. Chop mushrooms and add them to the skillet, cooking until they wilt.
  5. Shred the carrot and dice the bell pepper, then add them to the skillet with hoisin sauce, soy sauce, and sesame oil.
  6. Stir everything together and heat through.
  7. To assemble the bowls, start with rice, add the meat and vegetable mixture, top with green onions, drizzle peanut sauce, and sprinkle with chopped peanuts.
