Instructions
- Prepare the spicy peanut sauce by mixing peanut butter, sriracha, soy sauce, brown sugar, and grated ginger in a bowl, then thin it with hot water and set aside.
- Mince garlic and grate ginger, then heat cooking oil in a skillet over medium heat.
- Sauté garlic and ginger until softened, then add ground meat and cook until browned.
- Chop mushrooms and add them to the skillet, cooking until they wilt.
- Shred the carrot and dice the bell pepper, then add them to the skillet with hoisin sauce, soy sauce, and sesame oil.
- Stir everything together and heat through.
- To assemble the bowls, start with rice, add the meat and vegetable mixture, top with green onions, drizzle peanut sauce, and sprinkle with chopped peanuts.
