Ingredients

Soy Marinated Tofu

  • 14 oz firm tofu
  • 1 Tbsp light oil
  • 2 Tbsp soy sauce
  • 1 clove garlic, minced
  • 1 Tbsp brown sugar

Sesame Rice

  • 2 cups brown rice
  • 3.25 cups water
  • ½ tsp salt
  • 1 Tbsp toasted sesame oil

Spicy Peanut Sauce

  • ¼ cup natural style creamy peanut butter
  • 1 Tbsp Sriracha
  • 1 tsp soy sauce
  • 1 tsp grated fresh ginger
  • 1 tsp brown sugar
  • 3 Tbsp hot water

Other Ingredients

  • 1 tsp oil for pan frying
  • ½ lb snap peas
  • 2 green onions sliced
  • 1 Tbsp sesame seeds

Instructions

  1. Press the tofu for about 30 minutes to remove excess moisture.
  2. Cook the rice according to package directions, adding salt, and then mix with toasted sesame oil once cooked.
  3. Slice the pressed tofu into triangles and marinate in a mixture of oil, soy sauce, minced garlic, and brown sugar for about 20 minutes.
  4. Prepare the spicy peanut sauce by mixing peanut butter, sriracha, soy sauce, grated ginger, brown sugar, and hot water until smooth.
  5. Heat a non-stick skillet and cook the marinated tofu until browned on all sides.
  6. Sauté snap peas in the same skillet until bright green.
  7. Assemble the bowls with sesame rice, tofu, snap peas, and drizzle with spicy peanut sauce, garnishing with green onions and sesame seeds.
