Healthy Chocolate Coated Peanut Butter Fudge

The chocolate coating
Instructions
- Drain the silken tofu by wrapping it in paper towels and placing a heavy object on top.
- In a large bowl, mix powdered peanut butter, natural peanut butter, soy protein powder, and salt.
- Add honey, vanilla extract, and drained tofu to the mixture and blend until smooth.
- Place the mixture on parchment paper, fold it over, and press it to about ½ inch thick.
- Cut out shapes using a cookie cutter and refrigerate for at least 4 hours.
- Melt chocolate chips in the microwave, stirring until smooth.
- Spread the melted chocolate over the peanut butter shapes and refrigerate until the chocolate hardens.
