Ingredients

  • cup All-Purpose Flour (or bread flour)
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 8 tablespoons unsalted butter (or vegan butter)
  • ¼–½ cup chopped scallions or chives (optional)
  • ¾ cup sourdough starter discard
  • ½ cup sour cream (or vegan sour cream, buttermilk, or yogurt)

Instructions

  1. Preheat the oven to 425°F.
  2. Mix flour, salt, and baking powder in a medium bowl.
  3. Cut in the cold butter until the mixture is crumbly.
  4. Mix in scallions if using.
  5. In another bowl, combine sourdough starter and sour cream.
  6. Pour the wet mixture into the dry ingredients and mix until a shaggy dough forms.
  7. Knead gently for a few seconds, then pat into a rectangle.
  8. Fold the dough into thirds, patting it down each time.
  9. Cut the dough into 6 pieces and place on a parchment-lined baking sheet.
  10. Bake for 20-25 minutes until golden brown and the internal temperature reaches 205°F.
