Ingredients

  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2-3 tablespoons sugar
  • 2 teaspoons salt
  • 1 cup unsalted butter
  • 1 ½ cups chilled buttermilk

Instructions

  1. Sift together the flour, baking powder, baking soda, sugar, and salt in a large mixing bowl.
  2. Grate the frozen butter into the flour mixture or cut it in until it resembles coarse crumbs.
  3. Make a well in the center, add the buttermilk, and stir until just combined.
  4. Let the dough rest in the fridge for about 10 minutes.
  5. Knead the dough gently on a floured surface a few times until it comes together.
  6. Pat or roll the dough to about ½ inch thick and fold it 6-8 times for flakiness.
  7. Press the dough down to 1 inch thick and cut out biscuits using a cookie cutter.
  8. Knead any scraps together and repeat until all dough is used.
  9. Brush the tops with buttermilk or cream and bake at 400°F for 12-15 minutes until lightly browned.
