Flaky Homemade Biscuits

Instructions
- Sift together the flour, baking powder, baking soda, sugar, and salt in a large mixing bowl.
- Grate the frozen butter into the flour mixture or cut it in until it resembles coarse crumbs.
- Make a well in the center, add the buttermilk, and stir until just combined.
- Let the dough rest in the fridge for about 10 minutes.
- Knead the dough gently on a floured surface a few times until it comes together.
- Pat or roll the dough to about ½ inch thick and fold it 6-8 times for flakiness.
- Press the dough down to 1 inch thick and cut out biscuits using a cookie cutter.
- Knead any scraps together and repeat until all dough is used.
- Brush the tops with buttermilk or cream and bake at 400°F for 12-15 minutes until lightly browned.
