Ingredients

The biscuits

  • 2.75 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons sugar
  • 1.5 teaspoons sea salt or kosher salt
  • 16 tablespoons cold cubed butter
  • 1 to 1.25 cups buttermilk

For finishing

  • 2 tablespoons buttermilk
  • 1 tablespoon turbinado sugar (optional)

Instructions

  1. Whisk together the flour, salt, sugar, and baking powder in a large bowl.
  2. Cut the cold butter into the dry ingredients until the mixture resembles peas.
  3. Add the buttermilk and stir to combine, kneading lightly if necessary.
  4. Turn the dough out onto a floured surface and pat it into a square.
  5. Roll the dough into a 14-inch long rectangle and fold it in thirds.
  6. Rotate the dough 90 degrees and repeat the rolling and folding process two more times.
  7. Cut the dough into 9 equal pieces and chill them in the fridge for 30 minutes.
  8. Brush the tops with buttermilk and sprinkle with turbinado sugar if desired.
  9. Bake in a preheated oven at 400ºF for 25-30 minutes until golden.
