Ingredients

  • 2 cups whole-wheat pastry flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 4 tablespoons cold butter
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 450°F.
  2. In a large bowl, combine the flour, baking powder, and salt, and whisk together.
  3. Cut the cold butter into small pieces and work it into the flour mixture until it resembles coarse crumbs.
  4. Stir in the buttermilk until just combined.
  5. Turn the dough onto a floured surface, fold it over itself 15 to 20 times, and pat it into a thick piece about ¾ to 1 inch thick.
  6. Cut out shapes with a biscuit cutter and place them on a baking sheet.
  7. Bake for 10 to 12 minutes until fluffy and golden brown.
  8. Serve warm and freeze leftovers if desired.
