Ingredients

The dry ingredients

  • 3 cups all-purpose flour
  • 1 ½ tablespoons baking powder
  • 1 tablespoon granulated sugar
  • ¾ teaspoon table salt
  • ½ teaspoon baking soda

The fat and liquids

  • ¾ cup very cold or frozen salted butter
  • 1 ½ cups sourdough starter, fed or discard
  • ¾ cup buttermilk
  • to taste none melted butter, for brushing

Instructions

  1. 1. Preheat the oven to 425°F and line a half sheet pan with parchment paper.
  2. 2. In a large bowl, whisk together the flour, baking powder, sugar, salt, and baking soda.
  3. 3. Grate the cold butter into the dry ingredients and toss until evenly mixed.
  4. 4. Add the sourdough starter and buttermilk, and gently mix until a rough dough forms.
  5. 5. Turn the dough onto a floured surface and pat into a rectangle about 1-inch thick.
  6. 6. Fold the dough into thirds, then press it back into a rectangle and repeat once more.
  7. 7. Cut the dough into 12 to 14 squares or use a round cutter, placing them on the baking sheet.
  8. 8. Bake for 20-22 minutes until golden brown.
  9. 9. Brush the tops with melted butter and serve warm.
