Ingredients

The base

  • 2 Tbsp ground flax seed
  • 2 Tbsp water
  • 2 cups gluten-free rolled oats
  • 1 cup pumpkin puree
  • cup almond-coconut milk
  • cup almond butter
  • ¼ cup maple syrup
  • 1 Tbsp cinnamon
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • ¼ tsp salt

The mix-ins

  • ½ cup Enjoy Life dark chocolate morsels

Instructions

  1. Preheat the oven to 350°F and prepare an 8x8 baking pan with cooking spray.
  2. Mix 1 Tbsp of ground flax with 2 Tbsp of water and let it sit for 3-5 minutes.
  3. In a blender or food processor, combine all ingredients except for the chocolate chips and blend until smooth.
  4. Stir in the chocolate chips using a spatula or spoon.
  5. Pour the mixture into the greased baking dish.
  6. Bake for 30-40 minutes, or until a toothpick inserted comes out clean.
