Ingredients

The bars

  • ¼ cup ground flaxseed
  • ¼ cup warm water
  • ¾ cup all-purpose flour
  • ¾ cup almond flour
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 cup canned pumpkin puree
  • 2 tablespoons melted coconut oil
  • cup maple syrup
  • 1 teaspoon vanilla extract
  • optional vegan chocolate chips for sprinkling

The frosting

  • 1 cup vegan cream cheese
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease an 8x8-inch baking dish.
  2. Mix ground flaxseed and warm water in a small bowl and let it thicken for 5 minutes.
  3. In a large bowl, combine all-purpose flour, almond flour, pumpkin pie spice, baking powder, baking soda, and salt.
  4. In another bowl, whisk together pumpkin puree, melted coconut oil, maple syrup, vanilla, and the flaxseed mixture.
  5. Combine the wet ingredients with the dry ingredients and stir until just mixed.
  6. Spread the batter into the baking dish and bake for 25 to 30 minutes until a toothpick comes out clean.
  7. Allow the bars to cool completely before frosting.
  8. To make the frosting, beat vegan cream cheese and powdered sugar until smooth, then add vanilla and mix until combined.
