Ingredients

The pumpkin bars

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ¾ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • tsp ground cloves
  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 can (15 oz) pumpkin puree
  • 2 large eggs
  • 2 tsp vanilla extract

The cream cheese frosting

  • 8 oz cream cheese
  • 6 Tbsp unsalted butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a 15 by 10-inch jellyroll pan with non-stick spray.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. Melt the butter in a large microwave-safe bowl and let it cool slightly.
  4. Add the brown sugar, granulated sugar, pumpkin puree, eggs, and vanilla extract to the melted butter and whisk until combined.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 22 to 25 minutes, or until a toothpick comes out clean.
  8. Allow the bars to cool completely on a wire rack.
  9. For the frosting, mix cream cheese, butter, powdered sugar, and vanilla extract until light and fluffy.
  10. Spread the frosting over the cooled bars and cut into squares.
