Instructions
- Preheat the oven to 350°F and prepare a jelly roll pan with nonstick spray or parchment paper.
- In a small bowl, whisk together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
- In a large bowl, mix sugar, pumpkin, and oil, then whisk in the eggs.
- Fold the flour mixture into the pumpkin mixture until combined and spread into the prepared pan.
- Bake for 20 to 25 minutes until a toothpick comes out clean, then cool completely for at least 30 minutes.
- For the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
- Spread the frosting over the cooled bars, cut into 24 squares, and top each with a MellowCreme pumpkin.
