Ingredients

The bars

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • 2 cups granulated sugar
  • 16 ounces pumpkin purée
  • 1 cup vegetable oil
  • 4 large eggs

The frosting

  • 8 ounces cream cheese, softened
  • ½ cup butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 24 pieces MellowCreme pumpkins

Instructions

  1. Preheat the oven to 350°F and prepare a jelly roll pan with nonstick spray or parchment paper.
  2. In a small bowl, whisk together flour, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt.
  3. In a large bowl, mix sugar, pumpkin, and oil, then whisk in the eggs.
  4. Fold the flour mixture into the pumpkin mixture until combined and spread into the prepared pan.
  5. Bake for 20 to 25 minutes until a toothpick comes out clean, then cool completely for at least 30 minutes.
  6. For the frosting, beat cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
  7. Spread the frosting over the cooled bars, cut into 24 squares, and top each with a MellowCreme pumpkin.
