Pumpkin Bars with Cream Cheese Frosting

Instructions
- Preheat the oven to 375°F and line a 13 x 9 baking dish with parchment paper.
- In a large bowl, combine the coconut, graham cracker crumbs, walnuts, and melted butter, then stir.
- Press the mixture into the bottom of the prepared dish.
- In another bowl, mix the pumpkin, condensed milk, eggs, pumpkin pie spice, and salt.
- Spoon the mixture over the crust and smooth it out.
- Bake for 30 to 35 minutes until a toothpick comes out clean.
- Allow to cool completely before frosting.
- For the frosting, beat cream cheese and butter together in a stand mixer for 2 minutes.
- Add sugar, vanilla, half and half, and salt, starting on low and increasing to medium for 3 minutes.
- Beat on high for 1 more minute.
- Spread frosting over the bars and cut to serve, or cut first and frost individually.
