Ingredients

The batter

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 pcs eggs
  • ¾ cup plain Greek yogurt
  • cup honey
  • ½ cup almond milk
  • 1 cup corn (canned, frozen, or fresh)

For greasing

  • 1 tbsp butter or ghee

Instructions

  1. 1. Preheat the oven to 400°F and place a 10.25-inch skillet inside to warm up.
  2. 2. In a medium bowl, mix the flour, cornmeal, baking soda, and salt.
  3. 3. In a large bowl, whisk together the eggs and Greek yogurt, then add the honey and almond milk.
  4. 4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. 5. Stir in the corn.
  6. 6. Remove the skillet from the oven, let it cool for 5 minutes, and then grease it with butter.
  7. 7. Pour the batter into the hot skillet and return it to the oven for 20-22 minutes or until a toothpick comes out clean.
