Ingredients

The chicken

  • 12 pieces boneless skinless chicken thighs

The marinade

  • ¼ cup grainy mustard
  • ¼ cup date paste
  • ¼ cup coconut aminos
  • ¼ cup unseasoned rice vinegar
  • 1 tbsp fish sauce
  • 1 tbsp toasted sesame oil
  • 1 tsp Chinese 5 spice
  • 1 tsp ground ginger
  • 2 cloves garlic, minced
  • 2-4 pieces dried birds eye chili peppers, crushed

Instructions

  1. Mix all ingredients except the chicken in a bowl until combined.
  2. Arrange chicken thighs in a baking dish and pour the sauce over them.
  3. Mix the sauce with the chicken ensuring it coats all pieces.
  4. Cover with plastic film and refrigerate overnight if possible.
  5. Preheat the oven to 350°F and bake the chicken for 45 minutes, basting occasionally.
  6. Switch the oven to broil and brown the chicken for 8-10 minutes.
  7. Serve with additional sauce, garnished with green onions and chili if desired.
