Dutch Oven Bread

Ingredients

The dough

  • 3 cups bread flour or all-purpose flour
  • 1 tsp salt
  • 2 ¼ tsp rapid rising yeast
  • 3 tbsp sugar
  • 1 ½ cups warm water

The seeds

  • 2 tbsp almond slices
  • 1 ½ tbsp pumpkin seeds
  • 1 tbsp sunflower seeds
  • 1 tbsp flax seeds
  • 1 tbsp chia seeds
  • 1 tbsp extra seeds for sprinkling

Instructions

  1. Combine the flour and seeds in a large bowl, making a well in the center.
  2. In a medium bowl, mix warm water, sugar, yeast, and salt until combined.
  3. Pour the yeast mixture into the well in the flour mixture.
  4. Stir until the dough begins to form.
  5. Knead the dough on a floured surface for about 3 minutes until smooth.
  6. Shape the dough into a ball and place it in a lightly oiled bowl, covering it with plastic wrap and a cloth.
  7. Let the dough rise in a warm place for 1 ½ to 2 hours until doubled in size.
  8. Preheat the oven to 450°F.
  9. Shape the dough again and place it seam-side down on parchment paper, brushing with water and adding more seeds on top.
  10. Make a small cut down the center of the loaf.
  11. Place the Dutch oven in the oven for 15-20 minutes.
  12. Transfer the dough into the hot Dutch oven, cover with the lid, and bake for 30 minutes.
  13. Remove the lid and bake for an additional 5 minutes until golden.
  14. Allow the bread to cool completely before slicing.
