Ingredients

  • cups dark chocolate (60% cacao), roughly chopped
  • cups full fat coconut milk (from a can, use just the top cream part or coconut cream)
  • teaspoon peppermint oil
  • 2 drops peppermint oil (additional)

Instructions

  1. Melt the dark chocolate in a medium microwave-safe bowl in 30-second increments, stirring throughout until smooth.
  2. Once melted, add the coconut milk and peppermint oil to the chocolate and whisk until smooth and combined.
  3. Cover the mixture with plastic wrap and refrigerate for 3-4 hours.
  4. After chilling, use a hand mixer to blend the mousse on low to medium speed to fluff it up.
  5. Portion the mousse into small serving glasses or ramekins.
  6. Optionally, top with coconut whipped cream and chopped dark chocolate.
