Lofty Popovers (Yorkshire Pudding)

Ingredients

The batter

  • 3 large eggs
  • cups milk
  • cups bread flour or all-purpose flour
  • 1 teaspoon kosher salt
  • 3 tablespoons melted butter

For greasing and serving

  • to taste none softened butter

Instructions

  1. Preheat the oven to 425ºF and grease a 12-cup muffin tin with softened butter.
  2. If the eggs are not at room temperature, place them in hot water for 10 minutes.
  3. Warm the milk in the microwave until slightly warm to the touch.
  4. Blend the eggs, milk, flour, and salt in a blender until combined.
  5. Add the melted butter to the blender and blend until smooth.
  6. Pour the batter into the muffin tin, filling each well halfway.
  7. Bake for 20 minutes at 425ºF, then reduce the temperature to 350ºF and bake for an additional 10 minutes.
  8. Remove from the oven and serve immediately with softened butter.
