Ingredients

The scones

  • 2 ½ cups almond flour
  • cup low carb brown sugar, packed
  • 2 oz 90% chocolate, chopped into chunks
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ¼ cup butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon maple extract
  • ½ teaspoon stevia glycerite

The glaze

  • 0.75 oz 90% chocolate, finely chopped
  • 2 teaspoons butter
  • 1 tablespoon heavy cream

Instructions

  1. Preheat the oven to 350°F and line a large sheet pan with parchment paper.
  2. Chop the chocolate into chunks.
  3. In a medium bowl, mix the dry ingredients together using a whisk.
  4. Melt the butter in a small microwaveable bowl and then mix in the eggs, vanilla extract, maple extract, and stevia.
  5. Combine the wet ingredients with the dry ingredients and mix thoroughly.
  6. Sprinkle almond flour on the prepared sheet pan, then pour the dough onto the parchment and shape it into a rectangle about ½ inch thick.
  7. Cut the rectangle into 12 pieces and place them on the parchment.
  8. Bake for 15-18 minutes, then cool on a rack.
  9. For the glaze, melt the butter, cream, and chocolate in a microwaveable bowl, stirring until smooth.
  10. Drizzle the glaze over the cooled scones and store in an airtight container.
