Ingredients

  • 1 large Egg (separated)
  • ½ cup Wholesome Yum Blanched Almond Flour
  • tbsp Besti Monk Fruit Allulose Blend
  • ½ tsp Baking powder
  • ¼ tsp Sea salt
  • 2 tbsp Almond butter
  • 2 tbsp Unsalted butter (or coconut oil for dairy-free and paleo)
  • ¼ cup Unsweetened almond milk
  • ½ tsp Vanilla extract

Instructions

  1. Preheat the waffle maker and grease it lightly.
  2. Beat the egg white in a medium bowl until stiff peaks form and set aside.
  3. In a large bowl, combine almond flour, Besti, baking powder, and salt.
  4. Melt the butter and almond butter together, then whisk and add to the dry ingredients.
  5. Stir in the egg yolk, almond milk, and vanilla until smooth.
  6. Gently fold the beaten egg whites into the batter without breaking them down too much.
  7. Transfer half the batter into the waffle iron and cook until steam stops, about 5 minutes.
  8. Let the waffle cool slightly in the iron before removing. Optionally, toast for extra crispiness.
