Ingredients

Dry Ingredients

  • ¾ cup blanched almond flour
  • ½ cup arrowroot powder
  • 1 Tbsp coconut flour
  • tsp double acting aluminum-free baking powder
  • ¼ tsp sea salt

Wet Ingredients

  • 3 eggs
  • ½ cup cashew or almond milk
  • 3 Tbsp coconut oil or butter
  • 2 Tbsp maple syrup
  • 1 tsp raw apple cider vinegar
  • 1 tsp vanilla extract
  • 15-20 drops liquid stevia (optional)

Instructions

  1. Whisk together the dry ingredients in a large mixing bowl.
  2. In a separate medium bowl, whisk together the wet ingredients.
  3. Combine the wet and dry ingredients, stirring until mixed; the batter will be thick.
  4. Preheat the waffle iron and grease it with coconut or avocado oil.
  5. Spoon the batter onto the waffle iron and spread it out with a spatula.
  6. Cook the waffle for 2 to 3 minutes or until it reaches your desired doneness.
  7. Carefully remove the waffle and let it cool briefly to prevent sogginess.
  8. Repeat the process with the remaining batter.
  9. Serve with your favorite toppings.
