Paleo Waffles

Ingredients

The batter

  • 2 bananas mashed
  • 1 cup creamy almond butter
  • ΒΌ cup coconut milk
  • 2 tbsp flax meal
  • 6 tbsp warm water

For greasing

  • 1 amount Fat of choice

Instructions

  1. Preheat the waffle iron and grease it with your chosen fat.
  2. In a bowl, whisk together the flax meal and warm water, then set aside to thicken.
  3. In another bowl, combine the mashed bananas, almond butter, and coconut milk.
  4. Once the flax mixture has thickened, add it to the other ingredients and mix well.
  5. Follow your waffle iron's instructions for cooking the waffles.
  6. Once cooked, place the waffles on a plate in the oven on 'keep warm' while you finish the batch.
  7. Serve with your favorite toppings.
