Ingredients

The batter

  • cups almond milk
  • cup melted coconut oil
  • 3 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 1 large egg

The dry ingredients

  • cups all-purpose flour
  • ½ cup whole wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt

Instructions

  1. Preheat the waffle iron and prepare desired toppings.
  2. In a medium bowl, whisk together the almond milk, coconut oil, maple syrup, vanilla, and egg.
  3. In a large bowl, mix together the all-purpose flour, whole wheat flour, baking powder, cinnamon, and salt.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Scoop ½ cup of batter for each waffle into the waffle maker and cook for about 4 minutes, or until golden brown and lightly crisp.
  6. Serve with desired toppings.
